Description
Description
Ratlami Sev takes its name from Ratlam, a town in the Malwa region of Madhya Pradesh long associated with this style of gram flour namkeen. It’s a thin, pressure-fried snack built on a simple base — besan (gram flour) dough seasoned with clove, black pepper and carom seeds, then fried in groundnut oil until golden and crisp. What sets it apart from many other spicy Indian namkeen is that the flavour leans mild rather than fiery, so the spice blend comes through as warmth and aroma rather than heat.
Ratlami Sev is one of the few namkeen products in India to hold a registered Geographical Indication (GI) tag, granted by the Government of India (GI No. 363) in recognition of its traditional link to Ratlam. A GI tag doesn’t describe taste or quality on its own, but it does confirm that the product has a documented regional identity — useful context if you’re comparing it with more generic “mixture” or “sev” snacks that don’t carry any such designation.
The seasoning is where Ratlami Sev earns its identity. Clove contributes a warm, slightly sweet backnote; black pepper adds a gentle bite; carom seeds (ajwain) bring a faint bitterness that aids digestion of the fried dough and gives the sev its characteristic aftertaste; and a small amount of asafoetida (hing) rounds out the blend with a savoury, umami-like depth. None of these are used in isolation — it’s the balance between them that gives Ratlami Sev its recognisable character, rather than any single dominant spice.
Texturally, this is a thin-strand sev, pressed through a fine sev-maker and fried until it turns a light golden colour. Done correctly, each strand should shatter cleanly rather than go chewy or soft, and the namkeen should feel light rather than greasy in the hand. Because it’s made fresh to order rather than held in long-term storage before dispatch, the crunch you get is close to what you’d find at a namkeen counter in the Malwa region itself, rather than the softer texture that can develop in packets sitting on a shelf for months.
Ratlami Sev works well on its own with a cup of tea, but it’s also a genuinely useful kitchen ingredient. Many households in Madhya Pradesh use a milder sev like this as a topping for poha, upma or chaat, where a stronger, spicier sev would overpower the dish. It’s a good middle-ground snack for anyone who enjoys Indian namkeen but doesn’t necessarily want the higher chilli intensity of some regional varieties.
No artificial flavouring or added preservatives go into this recipe. That’s worth mentioning not as a health claim, but as a straightforward description of how it’s made: groundnut oil, gram flour, and whole or ground spices, prepared and fried in the traditional way. Because there are no preservatives, the product is best eaten within its stated shelf life and stored correctly (see Storage below) — it isn’t designed to sit indefinitely.
If you’re new to Indian namkeen, Ratlami Sev is a reasonable place to start precisely because it isn’t extreme in any one direction — not too spicy, not too oily, not overly salty. If you already know the wider sev family, it sits at the milder end alongside Ujjaini Sev, and noticeably gentler than Garlic Sev or Double Laung Sev, both of which lean into stronger, more assertive flavours.
As with any packaged gram flour snack, always check the pack for manufacturing date and batch details before consuming, particularly if you or anyone eating it has a nut, gram flour or spice sensitivity.
